Pork Belly Burnt End Tacos

Pork Belly is one of the easy meats to cook in a smoker. my friends and family love burnt ends made from pork belly so I decided to put burnt ends with some tacos. I kept these failry simple by making some pickled red onions and slicing some jalapeno peppers to blend the tenderness of the pork belly with the crunch the pickled onions and jalapenos bring.

Braise Time 45 minutes
Total Time 4 hours 15 minutes

Equipment

  • Traeger Pro 575 Any smokers will work
  • Cutting Board
  • Cooling racks I use these to make it easy to load a lot of small pieces on the smoker.
  • Steam Pan
  • Aluminum Foil

Ingredients
  

  • 3 pound Pork Belly I have rind cut off but you can also do that with a sharp filet knife. Cut Pork Belly into 1 inch cubes.
  • 8 ounce Pepper Jelly
  • 4 ounce BBQ Rub You made need more or less. Simply coat all of the cubes pieces
  • 8 ounce BBQ Sauce Homemade or your favorite store brand
  • 12 Tortillas
